Roasted cauliflower is a humble vegetable that, when prepared carefully, becomes a star at any meal. Roasting enhances its natural sweetness, creating golden, tender florets with lightly crisped edges. Begin by selecting a fresh head of cauliflower with firm, white florets and green leaves. Wash it thoroughly, pat it dry, remove the outer leaves, and trim the stem.
